Pangs of hunger are no stranger to Muslims marking Ramadan with dawn-to-dusk fasts and at the end of each day you may find yourself running out of ideas for delicious yet light desserts. Why not try the warm and comforting tapioca pudding, easy to make with this simple method.
Serves: 8-10 persons
1 cup – sago
6 cup – water
1 cup sugar
½ teaspoon – saffron thread
1 teaspoon – cardamom
2 cup – date syrup
1 teaspoon – rose water
1 - Soak tapioca in water for 30 minutes
2 - Place tapioca, water and sugar in a saucepan and bring to the boil
3 - Add date syrup when bubbling reduce heat and add saffron and cardamom
4 - Continue simmering until slightly thickened, remove from heat and add rose water
5 - Pour in to the serving bowls
6 - Serve hot
7 - Garnish with roasted cashew nuts
